A pretty little dessert

When feeding my lovely girlies recently, concluded our sweet and sumptuous soirée with a delightfully cool, fresh and fruity summer dessert. Ever so elegant, rather pretty and oh so simple! Try it!

Need:
400g ricotta cheese
165g caster sugar
300ml thickened cream
100g white chocolate Toblerone chopped finely
100g Turkish delight chopped finely
150g chopped nectarines

Do:
• Line 140cm x 21cm loaf pan with a strip of foil or baking paper to cover base and extend over the two long sides
• Beat ricotta and sugar in small bowl with electric mixer until smooth. Transfer ricotta to larger bowl
• Beat cream in same small bowl with electric mixer ’til soft peaks form
• Stir chocolate, turkish delight and nectarines into ricotta mixture, fold in cream
• Spoon mixture into prepared pan, smooth top, cover, freeze overnight or until firm

Present:
• Turn parfait out onto a long platter, slice. Stand at least 10mins or until softened slightly before serving.

Decorate with extra chopped turkish delight and throw a few delicate pink rose petals around the platter for a little extra visual pizzaz…present!

List upon list…upon list…

Heading overseas for 6 months means stuff to do, lots and lots of stuff and requiring a bunch of lists to prevent mild doses of panic…a trip such as this is meant to be fun isn’t it?

Created my first list in January, another in Feb, one for March and another for April…all in the hope that the May list will simply state ‘Pack’, Get on Flight, ‘GO!

For those contemplating a similar sojourn or are simply curious about why Janes’s been acting slightly crazed of late here’s February’s Top 20 things to do:

• Pop leave application in – total days less public hols? 135
• Confirm Company approval – thumbs up, phew!
• Inform family – Mum’s started worrying already
• Inform staff, family, friends – sighs of envy, rather nice
• Pop first bottle of bubbles – a cheapie as now on budget

• Find someone to manage home Unit lease – yea Georgina
• List what stays, what goes with fully a furnished lease
• Find Title Deed, prep paperwork – good thing I’m organized
• Plan day for Unit’s advertising photos – starting point
• Secure list of good carpet, spring clean, curtain cleaners

• Unsubscribe all auto emails – remarkably liberating
• Develop travel budget – may need to sleep in alleyways
• Update official budget – no incoming, plenty outgoing!
• Stop monthly fashion mag subscriptions – um? No!
• Book Writers Retreat – sigh of joy

• Clean out storage space in prep for more – liberating
• Start clean out with bathrooms – share excess girly stuff
• Pay balance of existing holiday deposits – no excuses now
• Create March list… Gulp!
• Pop another bottle of bubbles – deserve it!

‘One day’ be damned…

One day I’m going to retreat to the south of France to write my book” How many times have I said that to myself, possibly to you? Too many. Time to take action!

Laugh as I attempt to master two foreign languages…No sir, I ordered an omelette not pig trotters! Oh! I thought this train went to Nice not Rome? Smile as I share stories about the locals, the food, the architecture and the culture of the little villages I will be calling home and enjoy a few visual feasts as I share the best of my happy snaps.

My lovely friend Jenny and I will complete our already planned exploration of Bruges, Barcelona and Paris and then I’ll head on down to my retreat. Up and away in May, and for me, back to earth in November.

As you know I am passionate about the work I do and the company I work for, one that thankfully values me enough to put their blessing on my sabbatical, therefore will back at the desk November 18th – rejuvenated, restored and reenergized. A huge thank you to Janice (my Leader) Tim (her Leader), Bridget (Leader to all) and the fab Queensland team for making this possible.

There’s a lot to do beforehand, a lot to experience while there and I plan to entertain you along the way…I do need to practice my writing skills after all and who knows, may even get published…or not…the thrill is in the journey.
